This week we continued to make salads at Lowry like we always do because we’re basic vegetarians. However, this time we tried to make different salads to see who could make something new to change things up. We wanted to see how different combinations could come together in order to be more appetizing. One thing about Lowry that we do enjoy is that you can make your own salad & decide what ingredients are in it unlike most meals there. One of my friends has been starting to add fruits like strawberries or mandarin oranges to her salads, like lots of online recipes recommend. On the other hand, I have been trying recipes that suggest adding chickpeas to my salads. It’s been a very interesting week of salad making and I can honestly say I think we have upped our cooking skills.
I think this week I became aware of how many vegetables & green foods I eat throughout the week. I think that while it was nice to see this, it showed me how much protein I might be missing. This shed light on the bigger issue of campus dining not having many options for sources of protein if you don’t eat meat. This was one of our thoughts when the college was hiring the new dining company/staff because it’s important that they can create a balanced meal for all students.
